Bruschetta with Tomatoes and Arugula
Serves 4
Ingredients
- 8 thick slices whole wheat baguette
- 1 garlic clove, minced
- 2 tbsp extra virgin olive oil
- 4 ripe tomatoes, diced
- 1/2 cup arugula, rinsed and shredded
Directions
- Preheat oven to 450 degrees F.
- While oven is heating, combine tomatoes, minced garlic, 1 tablespoon olive oil, and arugula in a bowl.
- Toast both sides of baguette slices in top rack in preheated oven. Drizzle rest of olive oil on each slice and cover with bruschetta. Serve immediately.
