Rambutan, Banana and Spinach Smoothie

This healthy smoothie features rambutans and spinach, both of which are famous for their vitamin C content. One of the most important roles of vitamin C is to help keep your skin and veins strong and healthy by providing antioxidant protection and increasing production of collagen and elastin. Rambutans also provide a hearty helping of copper and manganese, while the baby spinach in this smoothie ensures you'll also be getting plenty of carotenoids, vitamin K, B vitamins (including folate), calcium, iron, magnesium, and potassium. Flaxseed oil is added to the blend for its omega-3 fatty acid content and its ability to facilitate the absorption of fat-soluble vitamins.

Ingredients
- 10 fresh rambutans
- 1 small banana
- 1 cup fresh baby spinach
- 1 ½ cups orange juice (Day 1*)
- 1 Tbsp flaxseed oil
- ½ cup crushed ice
Directions
- Peel and pit the rambutans. Ripe rambutans should be easy to peel with your fingers.
- Peel the banana and break it into large chunks. Rinse the baby spinach.
- Place the rambutans, banana chunks, baby spinach and the rest of the ingredients in a large-capacity blender or food processor in the order given above.
- Secure the lid and process until smooth.
- Pour into glasses and serve immediately.
